food please

Hey all-

Yesterday I bought about a pound and a half of sliced roast beef- as in deli sliced. I had plans to make it for this asparagus appetizer, but it didn't work out (long story!), so now I have all but two slices of it. For some reason, I've never been especially wild about a sliced roast beef sandwich.

Can you suggest anything I might do with it? I thought maybe of heating it up with gravy and then some mashed potatos or something, but what else might work? Maybe some sort of pie? Any thoughts would be appreciated! Thanks!

Yikes. As Dr. Seuss might say, that's a lot of roast beast!

I've never done anything non-sandwich with lunchmeat roast beef, but my suggestion would be to somehow change its character--shred it, maybe? Then you could put it on salad, or in burritos or something. Though that might taste odd. Good luck!

You could shred it as Magda suggested and use it for Sheppard’s pie. Just add a little beef gravy, top with corn/peas and mashed potatoes and bake until the top browns.

I know this isn't going to help with the roast beef situation at this point, but I love allrecipes.com - they have a feature where you can search for recipes by typing the ingredients you want to use/have in your house (ie, roast beef) and you can also type in ingredients you absolutely don't want in there or don't have on hand (ie, bread if you want to avoid the sandwich). It's a great thing.

I really like French Dip sandwiches dipped in some good au jus sauce. Probably not what you were looking for, but I love them! Ha.
